sorrullitos (sorrullo) – corn sticks
alcapurria – mashed plantain filled with meat then fried
pionono – plantain sliced longways and fried, then wrapped around meat patty, battered and fried
carne al pincho – kebabs of beef, chicken or shark
relleno de papa – mashed potato shaped around a ball of meat, dipped in batter and fried
empanadillas – fried pie filled with meat; called pastelillo in San Juan

EPI-01 Historical Old San Juan Kitchens & Dining Rooms
Walk through local culture by discovering historical homes left by Spain's heritage on our table
traditions and celebrations, and have a real coffee brake "merienda" on last home tour on premises.

Take a hike uphill, or ask taxicab driver at pier to drop you off at Plaza San José, at hilltop of Cristo Street. Meet Guide at this site. If
driving a car, park at Quinto Centenario underground parking for the day. Return on trolley ride once tour ends.
Meet hosting Guide in Plaza San José for escorted walk, stopping first at the oldest Capuchinos' monastery kitchen, currently
housing the Seminario Conciliar School in Old San Juan dating late 1600's. Continue to historic Casa Blanca, our first Governor
Juan Ponce de León's mansion under Spain's rule for a look and feel of a real military style construction house finished of the
early 1700's. Then we will try to visit one of two, historical homes dating 1800' s famed citizens in old times:
- Palacio de Santa Catalina, current oldest Governor's Residence in the New World still in use, depending of season or
special event it may not be open.
- Last house visit is an extraordinary house know the Museum of the Puerto Rican Family, currently a home museum plus
chef will introduce the cultural meal of a typical "merienda" or mid afternoon for coffee, chocolate, or tea and cookies the
Spaniard families practiced at home.
As it's the last stop, it shows a comprehensive 19th century collection of antiques and kitchen equipment making it a typical
example of an authentic restored home, belonging to any Spaniard merchant family of the era, within the city of Old San Juan.
Many affluent Spanish families settled the Old City then. They developed Puerto Rico's economy prior to 1898, when Spain lost
control of the Island to the United States of America, after loosing the Spanish American War.
EPI-02 Where's the Roast Pork?

Local favorite roast pork plus drinking are beer, rum and sangria is an all national favorite when cheerful celebrations come. So
we take the time to present a fun dining experience in a manly fashion menu, though women are welcome, just be aware eating
is our main objective. Each restaurant will provide samplings for one-of-a-kind tasting combo showcasing the pork as main,
ingredient for meal in cooking style of their own. If shopping for your spouse or friends as companions, ask them to meet you
after in last stop. Check out the folwwing schedule:
will find a free Rums of Puerto Rico cocktail our first cocktail drink. Follow your chef walk up two blocks and cool off on first visit to
Old Harbour Brewery Restaurant, for a micro-brewery where three (3) artisanal beers tasting awaits, for you to pick one, your
favorite. As your first drink it, host chef will present this first porky pig stop. Chef will introduce the cultural background and
importance of three native pork sausages in a "pincho" (skewer): black "morcilla", spicy "longaniza" and white "butifarra" all grilled
to taste.
Continue on to next door's famed, El Botin Restaurant, an original historical eatery in Spain, to savor another small plate of
roasted pork. The place of crunchy baby rib or two, doubles with a tropical dipping sauces on the side. The real and original
recipe for our "lechón asado" or the original "cochinillo asado" (roast piglet) recipe. Taste a glass of native "sangria" glass mixing
demo and tasting.
Dine-a-round walk over to Hard Rock Cafe (probably by 5:00 PM), our last stop. Yes, very American, but Puerto Rico is a USA
territory since 1898. Therefore our eating habits have been incorporated in our daily diet so we welcome this stop. A modern
Pirate's Huricane Glass will be our last drink on tour. Your's to keep as a souvenir! You can fill it with modern award winning
native, #1 light, Medalla beer or a fruit flavoured #1 seller, Bacardi Rum cocktail while nibbling to pork mini-burger on the side.
You are free to walk back to cruise, with our without spouse or remain on the spot till returns from shopping uptown. This modern
American landmark is easy to find, meet her to ship. Puerto Rico is over 100 years under dominance of the USA flag, so we are
very happy to welcome the burger to our menu and fries to our diet!
EPI-03 Chocolate Artistry in a Art Gallery
Puerto Ricans are in love chocolate delicacies including gourmet coffee brewing, both an art. One to be constructed by you
in a sculptured mini cake and coffee tasted as preview, into after dinner fun learning to be discovered late night:

Meet tonight's pastry chef in whites at Plaza de Armas, inside 4 Estaciones Café, in center of shopping district within Old San
Juan. Go ahead and order your :
First freshly brewed gourmet Puerto Rican coffee cup, ask it for take out, as after dinner tour regroups together to walk over to one
of many nearby art galleries, about a block down from café on Plaza de Armas.
Once on Cristo Street, chef will set-up in one art gallery of several, to enjoy local art in all, but practice chocolate sculpting by
yourself for a plated chocolate dessert. She/He will guide you share mocca choco artpiece trick buildings. Do shop for art prints
that will be in the surroundings. Inspire as you decorate your basic brownie cake with chocolate mouldings, learn to do curls,
sprinkle chips, and melt to stick loops and end with a side scoop of chocolate or coffee flavored ice cream on the side.
Special instructions for strictly Chocoholics attending regarding equipment! Sorry special dieters restricted as lots of fat and
sugar may be contained in ingredients. Some simple molding kits will be loaned, and Puerto Rican Chocolate Cortés cocoa
fans are welcomed to join us. Other tools will be provided (on loan) to participants. Chocolate cookbook, historical facts and
chocolate sample basket will be raffled amoung eating chocoholics on tour too.
